A new way to make pork and cheese medallions


Serves: 4 – Preparation: 10 minutes – Cooking: 15 minutes

Ingredients

  • 1 pork loin, cut 1″ thick
  • 45 ml (3 tbsp) maple syrup
  • 30 ml (2 tbsp) steak spice mix
  • 30 ml (2 tbsp) oil
  • 4 portions of fries or crispy sautéed potatoes
  • 500 ml (2 cups) cottage cheese

Soup

  • 1 onion, minced
  • 1 red pepper, julienned
  • 45 ml (3 tbsp) oil
  • 500 ml (2 cups) tomato coulis
  • 2 garlic cloves, minced
  • 1⁄2 cube of vegetables (or 15 ml/1 tsp vegetable stock)
  • 30 ml (2 tbsp) maple syrup
  • 5 ml (1 tablespoon) of Provencal herb mixture.
  • Salt and pepper to taste

Preparation

Part 1

For the sauce, in a hot skillet, fry the onion and bell pepper in a little oil, 2 to 3 minutes.

The second part

Add the tomato coulis, garlic, regular sauce, maple syrup, Provence herbs and simmer on medium heat for 10 minutes. Check the seasoning.

Part 3

Meanwhile, dress the pork medallions with maple syrup and steak seasoning.

Section 4

In a hot pan, fry the medallions in a little oil, 2 minutes on each side.

Section 5

In large bowls, put the fries, sauce, pork medallions and cheese on top.
