For a change from your usual fish recipes, Cyril Lignac offers you to make a delicious fried fish with vegetable sauce.
For 4 people
4 pieces of white fish of 130 g each
25 g semi-salted butter
½ liter of chicken broth
4 lemon leaves
The Vegetal Virgin
125g cherry tomatoes, washed and divided
1 piece of broccoli
1 shallot, peeled and chopped
1 lemon juice
10 cl olive oil
Fleur de sel and Espelette pepper
Boil the heads of broccoli in hot water with a little salt, when the tip of the knife goes in easily, drain it and put it in a bowl of cold water with a few ice cubes. Drain and cut into small pieces so that they are not too big. Mix with chopped tomatoes, chopped shallot, pour olive oil, lemon, mix gently and season with fleur de sel and Espelette pepper.
Preheat the oven to 150 ° C. In a hot skillet, pour olive oil, add butter and let it bubble to create a bright color. Season the fish with good salt, put it in the pan and let it brown on all sides. Remove from the oven and place in a casserole dish.
Pour the chicken broth and put it in the oven for 10 minutes. At the end of cooking, remove the fish and put it on a plate, pour the virgin on top and lemon juice.
