110 g fat
60 g flour

450 g chopped hazelnuts
280 g brown sugar
100 g water
1 cup fleur de sel

For the hazelnut praline, preheat the oven to 200 ° C. Put the hazelnuts to be roasted for 10 minutes. Mix water and sugar in a pan and cook until you get blond caramel. Add the hot hazelnuts, mix immediately and remove to a silicone sheet or baking sheet. Leave to cool slightly and add the fleur de sel. Pour into the bowl of a blender and grind until the praline is very smooth. Dispose of in a jar or container of your choice.
To make chocolate biscuits, preheat the oven to 190°C. In a bowl of boiling water, put a bowl and melt the chocolate in a bain-marie. Put the butter. Remove the salad bowl from the pan. Then add flour and sugar. Do not mix.
